I wish the EcoChallenge was longer than 2 weeks.  I will definitely be continuing my challenges even when this is over!  Thanks for bringing new light to our community!

Made up some smoked mini sweet peppers this weekend!  Yummmm....

I made a quinoa cucumber salad with all organic ingedients, I also curbed normal oatmeal for Organic non GMO oatmeal and I love it!!

We have a Crystal water tower in our home with refillable 5 gal jugs. we all use our Hydroflasks
